初しぼりがシンガポールに到着しました!
Hatsu shibori literary means "the first pressing". As its name suggests this is the season's first freshly pressed sake with new rice which is harvested in the fall in the same year. (Put it in other way, in wine word "Noveau" .)
初しぼりとは秋に収穫したばかりの新米で仕込んだ新酒です。ワインで言うのであれば"ヌーヴォー"。(あの有名なボジョレーヌーヴォーなどはワインの新酒です。)
The busiest season in the brewery is winter.
This is the traditional sake making "Kan zukuri". Back in the day, people believed that great sake has to be made in the cold weather(there was no air condition in those days as well...)
お酒造りが盛んで1番忙しいのは冬の寒い時期。これが伝統的な"寒造り"です。空調管理の出来なかった昔は寒い時期にお酒を仕込むのが美味しいお酒を造る条件だったのです。
From November the brewery start pressing sake and bottling without pasteurization.
This is why sake has young aroma like fresh fruits!
Once you open the bottle, beautiful fruity aroma will make you give way to temptation.
冬至から春先にかけて搾ったばかりの新酒を火入れをせずに、生で瓶詰めします。
だからフレッシュさに溢れていて開けると、ジューシーな果物のような香りが溢れてきます。

I had "Daishichi Yuki Shibori" for my first Hatsu shibori in this year.
Most of brewery make Jyunmai style but this one is Honjozo.
わたしが今年1番最初に頂いたのは"大七 雪しぼり"。
純米の造りが多い中、大七は本醸造酒の初しぼり。
Beautiful pale yellow like golden rice field in the rice harvest season.
色は美しい山吹色がかっています。
The glass is full of fresh juicy aroma...
フレッシュな果実香りがグラスから溢れてきます。
Once you ship round acidity spread in your mouth with rich rice flavor and taste kind like yogurt...well,I would say it is creamy.
飲んでみると生もと造りならではの酸味とまろやかなコクがあります。クリーミーさがあってヨーグルトのような香りも。
Beautiful first pressed sake with deep rice flavor which came from traditional way of making sake called "Kimoto".
This is Honjozo yet I think I taste more rice like flavor than Jyunmai sake.(compare to other Hatsushibori)
By the way Suzuki San from Daishichi brewery gave me an apron last month when we worked together for sake promotion.
Since then I have worn it when I have some tasks in warehouse!
お米の旨味をしっかり生かした大七ならではの新酒ですね。本醸造だけど、純米酒よりお米の旨味を感じられました。やっぱり私、大七のお酒が大好きで大ファンです。
ちなみに、前回一緒にお仕事をした時に大七の鈴木さんに頂いた前掛け、あれからちゃっかり使ってます!
Brewery recommends to enjoy it with sashimi of yellow tail.
酒蔵さんからのお勧め料理は寒ブリのお刺身など。
I am going to get some and try with sake tomorrow! Hehe, that is my weekend plan!
