Denshu -田酒@鮨みつや-

I had dinner at sushi Mitsuya and I brought a bottle of sake which I have kept for a while for special occasion.

先日"すしみつや"に食事に行ってきました!
ずっと飲みたかったある日本酒を持って。

I wanted to open my favorite sake (especially the sake I cannot find in Singapore)with really good Japanese food so I just couldn't open for something I cooked.

やはり、いいお酒は自分で作る料理ではなくプロが作る美味しい食事に合わせたいのです。
シンガポールでは見つける事の出来ないお酒は特にそう思います…!

Sushi Mitsuya's head chef is Harada San and I used work with him in the same hotel in Tokyo!
He is one of the greatest chef I have known and he can talk to fishes...haha, this is true!
He was asking Toro what's the best way to cook. That was funny and also he made it tasty!

鮨みつやの料理長の原田さんは東京の同じホテルで働いていたんです。原田さんは私が尊敬する熱いシェフの1人です。ちなみに、食材への熱意があるので魚と話も出来るんですよ(笑)!
この日は大トロを頼んだ時に、大トロにどんな調理方法が1番美味しいかを問いかけていました。その技はさすが…!素材を最大限に活かすのです!


We had Omakase course which means "leave it up to chef".
This is the best way to enjoy Japanese food because chef knows the most what's good!

メニューは"おまかせ"にしました。
やはり、旬の食材を知り尽くしたプロに任せるのが1番です。

Sashimi.
Loved kawahagi with kimo.

お刺身は手前のカワハギの肝巻きが絶妙でした。
Dried persimmon with butter was interesting.

干柿に有塩バター。
初めて食べました!とても面白い!
Kani&Uni....!!!!!

蟹とウニなんて贅沢。
We had a glass of champagna and a glass of beer then moved to sake.

まず、グラスシャンパンとビールを頂き日本酒へと移りました。

The sake I brought was "Denshu".
Denshu is from Nishida brewery in Aomori prefecture and the one of famous rich full-flavor sake.
As its name suggests "Sake of rice field", so you can truly enjoy the essence of the rice!

私が持って行ったのは田酒の特別純米酒です。
芳醇な味わいの純米酒で有名な青森県の西田酒造のお酒です。
まさに、字のごとく田んぼの酒…お米の真髄を味わえる旨味たっぷり純米酒です。

It is brewed with local rice "Hana Fubuki".
Denshu is also best known for Jyunmai shu.

お米は地元青森県で取れた花吹雪という品種。

By the way, I have realized that most people think "Daiginjo is the best sake" and it seems like they tend to try only Daiginjo sake here in Singapore.
Don't get me wrong ....which is not wrong because Daiginjo sake has beautiful features of course(and brewery take more time and cost more to make them) but I really want them to know the goodness of Jyunmai sake and other like Honjozo sake too. Each of them has own different good points!

話が変わりますが、ここシンガポールに来て私が感じたこと…
それは多くの人が「大吟醸が1番」という観念を持っており、純米大吟醸または大吟醸を注文または購入すること。
もちろん、大吟醸酒はどの蔵も時間、コストや手間暇をかけて造った素晴らしいお酒です。
ただ、私が知って欲しいのは純米酒にも本醸造酒にもそれぞれ違う個性と美味しさがあることです。なので、もっと飲んで頂きたいです!
今後、シンガポールの方々が食事の内容や気分に合わせてお酒を選んでいけるようになればと思っています。

One hour after I took it out of the fridge, it was the best temperature to enjoy.

話は戻り、1時間前にセラーから出したお酒は丁度良い温度になっていました。

Beautiful pale straw color and aroma of rice field in autumn and a hint of apple(flower).
Gentlest sweetness and full flavor of rice on your palette.

綺麗な薄山吹色が薄貼りのグラスに映えています。
香りは秋の田園を思わせるような稲のなかに、ほのかに林檎や小花の華やかな香りがします。
口に含むと優しい甘み、その後に米の旨味が広がっていきます。

Soft and silky refined texture just melt in your mouth.

柔らかく滑らかな舌触りで、舌でとろけるような感覚が味わえました。

After we enjoyed chilled to room tempature sake, I asked to slightly warm it up to "Hitohada Kan" which literally means "warm up to human body temperature".

冷で楽しんだ後は、少しだけ温めて"人肌燗"で頂きました。

Then I sipped the sake, I didn't feel the sake(because it was in the same temperature with my mouth) and taste just hits my tongue!
It brings out more flavor and "Umami" of the sake.

その温度帯で飲むと人の体温と同じなので、口に含むと温度を感じることなくすぐに味わいが舌で感じられるのです。
温めたことにより、更に旨味が広がって

It went well with fatty fishes like toro!
Sake melted the flavor into one and enhanced fat of the fish and washed away.
特に脂の乗ったトロなどには好相性でした!食材と上手く溶け合って一つに綺麗にまとまるだけでなく、脂を洗い流す効果もあるのです。まさにこれが「美味しい物を更に美味しくする」という相乗効果!






Oh...I had lots of sushis!
Every one of them was so tasty and I felt like I was in Japan!

何貫頂いたんだろう…
満腹になるまでお寿司を食べました。
どれも本当に美味しくて、まるで日本にいるような気分を味わうことが出来ました。

Hatsu shibori -初しぼり-

"Hatsu shibori" has arrived in Singapore!

初しぼりがシンガポールに到着しました!

Hatsu shibori literary means "the first pressing". As its name suggests this is the season's first freshly pressed sake with new rice which is harvested in the fall in the same year. (Put it in other way, in wine word "Noveau" .)

初しぼりとは秋に収穫したばかりの新米で仕込んだ新酒です。ワインで言うのであれば"ヌーヴォー"。(あの有名なボジョレーヌーヴォーなどはワインの新酒です。)

The busiest season in the brewery is winter.
This is the traditional sake making "Kan zukuri". Back in the day, people believed that great sake has to be made in the cold weather(there was no air condition in those days as well...)

お酒造りが盛んで1番忙しいのは冬の寒い時期。これが伝統的な"寒造り"です。空調管理の出来なかった昔は寒い時期にお酒を仕込むのが美味しいお酒を造る条件だったのです。

From November the brewery start pressing sake and bottling without pasteurization.
This is why sake has young aroma like fresh fruits!
Once you open the bottle, beautiful fruity aroma will make you give way to temptation.

冬至から春先にかけて搾ったばかりの新酒を火入れをせずに、生で瓶詰めします。
だからフレッシュさに溢れていて開けると、ジューシーな果物のような香りが溢れてきます。

I love this fresh,young and juicy aroma!!

私はこの香りが大好き!

I had "Daishichi Yuki Shibori" for my first Hatsu shibori in this year.
Most of brewery make Jyunmai style but this one is Honjozo.

わたしが今年1番最初に頂いたのは"大七 雪しぼり"。
純米の造りが多い中、大七は本醸造酒の初しぼり。

Beautiful pale yellow like golden rice field in the rice harvest season.

色は美しい山吹色がかっています。

The glass is full of fresh juicy aroma...

フレッシュな果実香りがグラスから溢れてきます。

Once you ship round acidity spread in your mouth with rich rice flavor and taste kind like yogurt...well,I would say it is creamy.

飲んでみると生もと造りならではの酸味とまろやかなコクがあります。クリーミーさがあってヨーグルトのような香りも。

Beautiful first pressed sake with deep rice flavor which came from traditional way of making sake called "Kimoto".
This is Honjozo yet I think I taste more rice like flavor than Jyunmai sake.(compare to other Hatsushibori)

By the way Suzuki San from Daishichi brewery gave me an apron last month when we worked together for sake promotion.
Since then I have worn it when I have some tasks in warehouse!


お米の旨味をしっかり生かした大七ならではの新酒ですね。本醸造だけど、純米酒よりお米の旨味を感じられました。やっぱり私、大七のお酒が大好きで大ファンです。
ちなみに、前回一緒にお仕事をした時に大七の鈴木さんに頂いた前掛け、あれからちゃっかり使ってます!

Brewery recommends to enjoy it with sashimi of yellow tail.

酒蔵さんからのお勧め料理は寒ブリのお刺身など。

I am going to get some and try with sake tomorrow! Hehe, that is my weekend plan!

よし、明日買ってこよう!笑

Nabe&Sake Night

It has been a long time since I wrote the last post!
I've been great and getting used to new job.

久しぶりに書きます。仕事でバタバタしていていましたが相変わらず充実した毎日を送っています。

By the way, I had a "Nabe party" with sake lovers during Chinese New Year.

先日チャイニーズニューイヤーということでお休みだったので酒ラバーズで集まり、鍋パーティーをしました!


There are so many kinds of foods to cerebrate with and each of them has meaning or people's
wishes for new year. Here in Singapore, most of people celebrate CNY with steamed boat which is similar to Japanese nabe....so we decided to have nabe with Japanese sake!

チャイニーズニューイヤーは新年に願いを込めた料理がたくさんあります。
シンガポールはスティームボートといって日本でいうお鍋をよくするみたいです。
なので、鍋パーティー!

I brought "Gokyo Isehikari" from Yamaguchi prefecture which is one of my favorite sake.

お酒は私は"五橋 イセヒカリ"を。
五橋は私のお気に入りの一つ、山口県のお酒です。


Mika San has lots of selections of sake and her wine cellar filled up with wines and sake looked like treasure box to me!!

みかさんのご自宅にはお酒やワインがたくさん詰まった宝箱のようなワインセラーが…‼︎

And...she has beautiful sake cups like "Bizen-yaki" and cups made from tin.They are so beautiful and I am happy just to look at them all day...!
I am surprised that sake actually tastes different when you drink sake out of them!

そして、日本の伝統工芸品である素敵な盃がズラリ。
備前焼や錫でつくられたお猪口は見ているだけで幸せです。
そんな素敵なお猪口でお酒を頂いたのですが、驚いたことに味が変わることがわかりました。遠赤外線効果でまろやかになるのです。

Anyway...here we go!
These are tonight's selections of sake!Wooohooo I was so excited to taste them!

さぁ、本題はお酒!
ズラリと並べた日本酒が今夜の鍋のお供です。

We started with "Cho Sogabe"from Tsukasa botan.
It has calm aroma and crisp dry taste(dryness+8).
It goes well any kinds of food.

まず、初めは司ボタンの"長宗我部 超辛口純米酒"。
香りは落ち着いていて、キリッと辛口の純米酒なので何にでも合わせられます。
We finished this one before nabe.
It was our pre drink with Japanese snacks.

お鍋の前に旨味たっぷりの日本のおつまみを楽しみました!

We enjoyed Jyunmai sake with special japanese Otsumami "Karasumi" which is dried mullet roe and has unique deep flavor! Food which has "Umami" is best enjoyed with Jyunmai sake because Jyunmai sake has lots of Umami elements which comes from acids like amino acid.

みかさんが日本で買って大事にしまって置いたというカラスミ!
カラスミは旨味たっぷりで塩分もあるので純米酒にはぴったりです。
純米酒は旨味成分のアミノ酸が多く含まれているので、干物やチーズなどとも楽しめるんです。

After people got together we started cooking nabe and opened another bottle which was "Gokyo Isehikari".

メンバーが集まったので、お鍋開始!
お鍋と同時に次は"五橋イセヒカリ"を開けました。

As the name suggests it is brewed using "Isehikari rice".It is also brewed on the wooden barrel so, right before the sake passes into your throat, you can feel a gentle bitterness.
I would love to drink this sake with tempura of spring vegetable and mountain vegetable which season is just around the corner!

イセヒカリという品種のお米を使用しているのでこの名前がついています。
そして、昔ながらの桶仕込み!
その桶仕込みからの影響なのか、最後に心地よい苦味を感じられます。
これから春にかけての野菜や山菜の天ぷらに合わせてみたいです。

And after that we moved on to "Daishichi Kimoto Jyunmai" .
This is the BEST sake for Nabe!! It has strong body to support full flavour food.

お次は大七酒造の代表である"大七 生もと純米"を。
色々お鍋と日本酒は合わせてみたものの、大七に敵うお酒にはまだ出会っていません。
しっかりしたボディーがある旨味たっぷりのお酒なので、しっかりした味付けのお料理や鍋、すき焼きにぴったりです。

I highly recommend to slightly warm it up and enjoy with full flavour food.
When you warm it up, the sake is balanced between sweetness and umami and it gives you long but dry after taste.

熱燗ではなく、ぬる燗またはそれより少し熱めの温度帯で飲むとグッと旨味が増します。

Then another one..."Kawazuru Gensyu" which is cute bottle wrapped with bamboo leaf.
It is undiluted sake so it is powerful and flavorful with dry finish.

そして、"川鶴 竹の皮包み"原酒。
芳醇でガツンとパワーがありました。
コクもあって後味はスッキリです。

I thought we finished all of our sake though Mika San offered us another bottle!
Last bottle was "Shimabara Jyunmai Daiginjo".

全部開けちゃった〜と思ったら、みかさんがまだ出してくれました!
最後に"しまばら 純米大吟醸"を。

I enjoyed drinking out of a cup with crab.
I thought that it almost start moving in a cup...woooo dangerous!(means I enjoyed a lot!)

お酒の中でカニが泳いでて可愛い。
だんだん動いて見えてきそう…危険。笑

It was a great nabe party with beautiful sakes!
I'm feeling that 2014 is going to be another great year because I started with great sakes!!

楽しい鍋パーティーでした。
美味しいお酒でスタートしたので、よい年になりそうな予感…!

Daishichi Brewery-大七酒造-


One of my favourite sake breweries “Daishichi-Brewery” was visiting here in Singapore!
I didn’t used like hot sake before I get to know Daishichi’s warm sake. Their warm sake completely changed my mind and opened the way to the new sake world.

念願の大七酒造さんがシンガポールにやってきました!
お燗が苦手だった私の観念を変えた大七のお酒。燗酒の美味しさを知ることで日本酒の楽しみ方がぐんと広がりました。

 

 

I had a glad occasion to meet Ohta-san who is 10th generation owner of the Brewery, Mr. Blankestjn and Suzuki-san.
今回いらっしゃったのは十代目の社長である太田さん、海外担当のブランクスタインさん、そして営業部長の鈴木さん三人。

 

 

The first thing it comes to your mind when you hear Daishichi sake would be “Kimoto brewing ” which is traditional method of making the yeast starter . However all breweries used to make sake with Kimoto in the old days, most of today’s breweries have shifted to “Sokujyo Brewing ” which is much easier and faster way to make yeast starter.
Daishichi considers Kimoto a part of its heritage and believes in this method that makes sake wilder, stronger and more pronounced flavour that can be fascinating.
大七のお酒といえばまず一番初めに思い浮かぶのが、伝統的な造りである「生酛造り」です。多くの酒蔵は効率の良い造りである「速醸酛」を採用している中で、大七は創業以来昔ながらの製法にこだわり続け、生酛造りでなければ生み出せない深い味わいを醸し続けています。

 

 

Besides that, all of their sakes are aged at least for one year to enhance the flavour. These are the reasons why their sake has firm body and Umami which surprisingly gets better when sake is warmed.
更にすべてのお酒を搾った後に最低一年寝かせて旨さを倍増させているそうです。
そのこだわりの精神から生まれたしっかりとしたボディと旨み、これがお燗にして更に活きるお酒なのです。

 

 

Another special feature of Daishichi is “super-flat rice polishing”. Rice is polished into small rounded spherical shape to remove the unwanted flavors. Conventional spherical polishing wastes precious starch by excessively abrading the ends of the grain’s long axis. However Daishichi developed new method which removes unwanted material equally and leaves more of the best of the grain. As the name itself suggests, the rice grains are super flat after polishing!
Daishichi is not afraid to take technical risks like breaking the rice grains in the polishing process and taking triple the amount of time.
そして大七酒造のもう一つの特徴は、太田さんが熱く語って下さった「超扁平精米」です。通常精米したお米は丸い形をしていますが、大七が開発したこの特殊な精米法で削ったお米は縦長のお米の形をしているのです。これには巧みな技術と多くの時間が必要とされますが、その分通常の精米に比べて均等に表面を削り取っているので効率的に雑味になる成分を取り除くことができるのだそうです。

 

 

 

To my surprise, they don’t use special machine for this polishing method. The key of this method is the human technic. The head of polishing department Mr.Ogata received an award of “Contemporary master craftsman” for polishing method for the first time in the sake history!
更に驚いたことに、この扁平精米には特別な機会を用いるわけではなく、往来の精米機を使うので精米担当者の腕がとても重要だということです。精米部長の尾形義雄さんは精米で史上初の『現代の名工』に輝いたほどです。

 

 




I tried three sakes and first one was “Kimoto Jyunmai-Daiginjyo MINOWAMON”. What strikes me the most about this one was that Ohta san’s word “The more the grade of sake is high, the more main dishes should be suited.” 
まず最初に試飲させて頂いたのは、「生酛純米大吟醸 箕輪門」。太田さんは「グレードが高いお酒ほどメインディッシュに合うような造りをしたい」とおっしゃっていたのがすごく印象に残っています。

 

In wine world, high-grade wines are paired and be enjoyed with high-class foods. So as you begin to pair wine with food, you start with casual and light wine with appetizer and shift to higher grade wines as you enjoy the course dishes. However in Sake world, in general you better start with higher grade sake like Ginjyo or Daiginjyo and shift to Jyunmai with the main course. But…why? The reason is because most of premium sake is overpowered by full flavour dishes.
ワインの世界ではグレードが高いワインほど、グレードの高い料理やメインディッシュに合わせます。しかし、日本酒の世界では逆なのです。世の中に出回っている大吟醸酒は一般的に香りが高く繊細なものが多いので、しっかりした味付けのメインディッシュに合わせるとお酒が負けてしまうことがほとんどです。

 

 

However, Daishichi’s Daiginjyo sake changed this fixed idea! It has not only elegant Daiginjyo aroma but also firm body with Umami and deep flavour as Jyunmai-sake, so it can be enjoyed with main dishes even with cream sauce.
しかし、その観念を覆したのがこの大七の純米大吟醸!大吟醸ならではのエレガントさを持ちながらも、コクと旨味も持ち合わせているのです。その為少し温度が上がってきても十分に楽しめる純米大吟醸酒です。特にイクラやカニ、またはクリームソースを使った洋食にも合う酒です。

 

 

 


After that, I moved on to their main product “Jyunmai Kimoto”. It is enjoyable in wide range of temperatures especially when it’s warmed. It has a lot of Umami flavors and they go well with full flavoured foods even with Chinese food with lots of spices.
次に頂いたのは大七の大黒柱商品である「純米 生酛」。これは、常温でも冷やでも美味しいだけでなく、燗にするとより旨みとコクが増す一本です。この旨みが、味のしっかりとした料理や珍味と相性が抜群なのです。

 

Warmed sake is not as popular as chilled sake here in Singapore because it is considered that warmed sake is too hot to drink in such a tropical weather country. However it is freezing cold inside the building with the air conditioners, so this is the best way to warm your frozen body up.
シンガポールは真夏の国ですが、どこに行っても室内はエアコンで極寒…そんな冷えた体を温めるのが燗酒なのです!!温度で色々な表情を見せてくれるお酒なので、この一本で食事に合わせて温度帯を変えながら楽しむのも面白いです。また味のしっかりとした料理にも負けないボディがあるので中華料理などにも相性が良いです。

 


At last, I had “Kimoto Umeshu” which is made with Gensyu(undiluted sake) of “Jyunmai Kimoto”. They had many experiments with many different sakes and decided to use this  Kimoto sake for Umeshu because it is sufficiently robust not to be overwhelmed by the plum. The richness of the sake wraps the acidity of the plums in a delectable smoothness.
The best way to enjoy this Umesh is to be chilled in wine glass with dessert.
最後は生酛純米の原酒をベースに造った「生酛梅酒」を。なめらかで優しいくちあたり。梅の爽やかな酸味と自然な甘みが口に広がると同時に、生酛ならではの濃厚で華やかな香りが鼻を抜けていきます。このエレガントかつ芳醇な味わいは日本酒で作った梅酒ならではです。冷やしてワイングラスに注いで、デザートと一緒に楽しむのがお勧めです。

 



Daishichi often have “Daishichi sake dinner” and serve sakes which is perfectly paired with course dishes. I would love to do that in near future!
太田さんによると「大七ディナー」を開催してコース料理に合わせて大七のお酒を提供したりもしているそうなので、私が働いているお店でも近い将来機会をいただけたらと思います。
